The Journey: Small towns like Salida, Colorado flourish in times of increased tourism. Then comes pandemics. And for the food industry, it was tethered to the same fate.

I spent countless mornings (turned extended weekends) passing through this small town on the way to ski up Monarch Pass, or while heading south to Valley View Hot Springs in a caravan full of burnt-out city dwellers. This area was always a place of sanctity, calm, and a budding food scene. Being socially distant, my photography partner and I headed south to interview restaurateurs, brewers, and business owners that make this river town the next best place in Colorado.
